Seasonal pasta recipe using fresh tomatoes.

Requirements

Special equipment

  • Something to blend with like an immersion blender or food processor.
  • Oven with convection.

Ingridients

Olive oil3 tbsp
Red onion2
Pine nuts50g
Basil30g
Parmesan50g
Saltto taste
Pepperto taste

*Cayenneto taste

Recipe

  1. Cut the tomatoes into halves and remove the green parts. Peel the garlic and quarter it. Peel the onions and qarter them. Put everything onto an baking dish and coat with the olive oil. Mix everything with your hands to ensure an even coating. Bake in the oven using convection for 1h at 150°C.
  2. Roast the pine nuts and grate the parmesan cheese.
  3. Blend everything from the baking tray (liquid included). Add the pine nuts and basil. Blend again.
  4. Optionally add the long pepper (grind it before adding). Season with Salt and Pepper to taste. If an increased level of spicyness is desired season to taste with cayenne.
  5. Serve sauce with pasta noodels of your choice with the grated parmesan on top.
