Pistacio Salad
Salad with tomatoes, pistacio and Tomme de Savoi.

Pistacio | 30g |
Tomme de Savoie (see Note) | 80g |
Aged balsamic white vinegar (see Note) | 110g |
Olive oil | 20g |
Medium spice mustard | 15g |
Salt | to taste |
Pepper | to taste |
Recipe
- Wash the tomatoes and cut into quarters.
- Wash the lettuce, use a salad spinner to dry it. If you do not have a salad spinner let it sit in a sieve for at least 20 minutes. Cut the lettuce into strips with a width of 2cm.
- Grind half the Pistacios into a powder. Leave the rest for garnish.
- Mix the vinegar, oil, mustard and pistacio powder. Season to taste with salt and pepper.
- Cut the cheese into 0,5cm cubes
- Either mix everything together at this point in a large bowl or use multiple smaller bowls where you but the lettuce at the botton followed by the tomatoes, cheese, sauce and pistacios.
Tip: If you plan on eating the salad later store the sauce and vegetables seperatly and mix them right before eating.
Note: The vinegar used in this recipe has a high sugar content (around 62%). If you are using a more acidic vinegar I would start with 35g of it and add honey until the sauce it nicely balanced. If you are not able to get “Tomme de Savoie” cheese something like Gruyere would also work well.
