Protein Enriched Sour Dough Bread
My current sour dough recipe with an extra in protein content.

Ingridients

Sour dough starter | 100g |
Spelled flour | 200g |
Rye Flour | 100g |
Seitan flour | 100g |
Olive oil | 20g |
Water | 300g |
Salt | 8g |
Rice flour | as necessary |
Recipe
- Mix up the sour dough starter, spelled flour, rye flour, seitan flour, water, olive oil and salt. Let it rest for 30 mins.
- Stretch and fold the dough. Cover the inside of a bowl with a kitchen towl and dust it with rice flower. Shape the dough into a ball and put it in the bowl. Cover and let it rise for 12h - 24h at room temperature.
- Preheat the oven with the dutch oven inside for 30m. Flip the dough from the bowl onto an backing sheet. Score the dough. Put the dough inside the dutch oven and bake for 20m. Remove the lid of the dutch oven and bake for another 20m.
- Take out the dutch oven from the oven and put the lid back on. Let it rest for 1h.
- Take the bread out of the dutch oven and enjoy.
